Recipe Box: (NonTraditional) Chimichurri Sauce

Happy 2025 and welcome to the New Year!

One of the most common questions we hear revolves around how to make meal prepped food flavorful, and our response is to make this chimichurri sauce recipe ASAP. While the ingredient list veers quite a bit from a traditional recipe, we think you’ll enjoy this fresh take sans cilantro.

What We Love About It:

It’s full of greens, packed with flavor, quick to make, easily added to literally anything (grilled chicken, steak fajitas, turkey meatballs, roasted chickpeas, shrimp quesadillas, etc.). Try it, comment, and let us know how you enjoyed it!

INGREDIENTS:

1 Cup Kale, Packed

1/2 Cup Basil, Packed

1/2 Cup Parsley, Packed

1/2 Cup Oil (Olive, Avocado)

1/4 Cup Water

2 Limes, Juiced

1/4 Cup Nuts (Cashews, Pine Nuts, Walnuts, Almonds)

1-2 Cloves of Garlic

1 tsp. Salt

1/2 tsp. Smoked Paprika


INSTRUCTIONS:

(1) In a food processor, add kale, parsley, basil, and olive oil.

(2) Blend for 1-2 minutes, then add water, juice from limes, nuts, garlic, salt, and smoked paprika.

(3) Blend until the desired consistency is reached (we like our super smooth), and pour into a sealed glass container.

We recommend using this within one week when kept in the fridge, and any leftovers can easily be stored up to a month in the freezer.
